Summer. Is. Here. | Homemade Ice Cream

There's nothing better than summer. Summer food. Summer weather... Oh wait! There's none of that here. Only rain.
Rain. Rain. Rain. That's all it's done since I got home.
Well, I'm at the cabin for the month (with a couple exceptions, like going to the cities this weekend and home for a week).
We've been eating such good food so far. I forgot how great it is to be able to cook in a kitchen and not in my "kitchen" that I had in my dorm room... I wonder if I ever took a picture of that. It was pretty intense, I must say. (I just looked. I did, but it's nowhere to be seen :( Oh well!)

Tonight we made homemade ice cream. My grandma, Mildred's, recipe. Soooooo delicious!

Mildred's Vanilla Ice Cream
8 cups milk (we use 2% usually)
2 cups heavy whipping cream
5 eggs
3/4 cup sugar
1 large package vanilla pudding
1 tablespoon vanilla





Question of the night. If someone eats gluten and farts, can you get cross-contamination from the aroma? Let me know what you think!

A Photo with my JoJo

Well, today I decided it was time to break out the camera. It's almost senior/wedding season. Me and my good friend, JoAnna, went out with my camera and a tripod and had some fun. And when I say fun, I mean fun. I almost peed my pants laughing. So good!

Here's a couple photos from the night. As you may be able to tell, I'm obsessed with the more vintage-y look right now.

Orange Teriyaki Chicken | Gluten Free

My mom recently told me I had to try this recipe and so me and David tried it out when I was down in Illinois last week. I absolutely fell in love with this recipe! I made it again the other night back at school. Yes, it is that simple of a recipe! I hope you all enjoy this as much as I do!

Ingredients:
1/2 c gluten free teriyaki sauce
1/3 c orange marmalade (I use sugar free)
1/3 tsp crushed red pepper
1/3 tsp fresh minced ginger
1 Tbsp vegetable oil
1 lb boneless chicken breasts, cut into large bite-sized pieces
1 yellow pepper, chopped into large chunks
1 green pepper, chopped into large chunks
1 red pepper, chopped into large chunks
1 Tbsp corn starch
1 Tbsp water
1/4 cashews (optional, but in my opinion it makes the meal)

Directions:
Whisk together the first four ingredients in a bowl.
Heat the oil in a wok over medium/high heat.
Add the chicken and cook for approximately four minutes - until cooked. Continue to stir/toss until done.
Add the vegetables and continue to cook another 2-3 minutes, using a wooden spoon to gently toss the veggies.
Mix the corn starch and water together until smooth. Add to the orange-ginger-teriyaki mix and whisk together.
Pour the sauce into the wok and toss the vegetables and chicken until coated. Continue to cook (about 3-4 minutes) until the sauce thickens.

I made white rice to go with this. Delicious!

Bracos.

So I love food and I forget to blog. But, I would like to start blogging more, about life and the food I eat. For those of you who don't know, I am both type one diabetic and have celiac disease. I figure I should be sharing as many recipes as I have so other people will be able to eat yummy food, too. We'll see if it works out. But hey! It's another thing to blog about. Maybe it'll get me blogging more often. So, here's the first food that I love.
Bracos.
Bracos are a beautiful invention of my lovely friend, Calie Flynn. It's basically a taco, but with a brat. Hence... braco. It's quite simple to make. I'll be honest I don't like the idea of writing a real recipe for this one. 'Cause it's that simple.
Basically, you make a brat (or 2 or 4 or 10), cut up an avocado in strips, cut up a tomato in strips, cut cream cheese in strips. Put it all on a soft shell. Eat. Simple. Do it. Enjoy it. I love it! I basically eat this all summer.
